Post production tasks: kneading (Spain)
Behind the man, covered with a cloth, is the kneader, where bread was kneaded. Bread was the caloric base of diets in the rural parts of Spain well into the latter part of the 20th century.
Kneading has been an essential post production process for making bread, which was then baked in a communal or home oven, depending on the village. This process persisted into the 1970s in many villages in Spain.
