Local market in Haiti, selling salt

Salt is the only mineral which humans use on a daily basis, either as a condiment or as a preserving agent, and although its commercial production is now industrialised, it can still be found at local markets.

Its importance as a preserving agent is very clearly expressed by the word “salary”, which meant the amount of salt a Roman legionary (and other workers) received to conserve the food they were allotted.
